Shawarma's first mention in the 13th century.

Dear users, dear WWGB, I have provided a source from the 13th century with the first ever mention of the principle of the shawarma, proving it originated in Syria and not the Ottoman Empire. 1) It's listed as a cookbook, not a scholarly resource. We'd want to verify where they're getting this claim from, but if they just say it without any evidence, it won't be compatible with our WP:RS rules.

The book is not just a cookbook. It's one of the most famous cultural books which explains much about the benefits and recipes of food, perfumes, soap, and medicine. It has its own Wikipedia page. The page number regarding the shawarma wrap is 25, it was written in the citation. The word shawarma was not written there, as it was derived from the Ottomans, but the dish definitely first originated in the 13th century and its confirmed in this book. The specific text that I am referring to, which directly describes the preparation of the shawarma is as follows:

"Put a fattened chicken on a skewer. Dig a niche in a wall and build a hot charcoal fire in it. Take sieved bread crumbs and place in a pan or tray under the chicken, but not on the fire. Roast in the niche on the side exposed to the fire, letting the fat drip onto the bread crumbs. When done, add sugar, pistachios, and rose water to the bread crumbs and stuff the chicken. While the chicken is roasting, rub with chicken fat, rose water, beaten sesame oil, and salt, keeping the pan or tray beneath it. From time to time, use a feather to baste the chicken with rose water and sesame oil."

It describes the chicken being held onto a vertical skewer with a fire source on the side, where the fat of the chicken is dripped onto a tray beneath it. This is the core idea of the shawarma installation. Syr de (talk) 19:37, 21 September 2024 (UTC)[reply]

This does not say the chicken is sliced and stacked, or that it is rotated. The term "shawarma" is not used. I could equally claim this is an ancient recipe for a type of "roast chicken". While I agree with your points, you should read the arabic version. It describes a form of stacking the chicken. The word shawarma wasn't used back then as it originated in the Ottoman empire. Syr de (talk) 21:22, 29 September 2024 (UTC)[reply]

Riots over mentions of Israel

Not sure if I may be the only one, but there had been on and off edit warrings due to mentions of Israel. I personally think that anyone who tries erasing Israel's information need a straight warning or maybe even a block. Transporting the Israel-Palestine conflict here is certainly unethical. This page has been a source of ethno-nationalist edit warring for years. I'm afraid that's nothing new. The associated cuisine has listed Arab cuisine for quite a while now, see for example this or this this version. Doner Kebab

This is known as a Doner Kebab throughout the UK. Why no mention in the opening sentence, as is usual, of the UK's (or other nations') alternate name for a dish? A nation whose citizens never use (and I suspect have never heard of) the term Shawarma? Most odd. Blitterbug 13:15, 29 December 2024 (UTC)[reply]

adding "yougoslavian shoarma" as discussion. a woman prepared that meal for me. it uses full leaves of saurkraut to wrap the minted meat in.then its cooked. herbs/spices unkown to me. 'evidence' verbal and on my plate.

The Malgoum of it all

The Bahraini Shawarma variant, the Malgoum, is noticeably missing from this article. Especially egregious considering all the other including National variants.

Unfortunately, I've been unable to find a suitable source to reference for the existence of the Malgoum, however, upon a google search there is a litany of youtube videos and wordpress articles describing the Malgoum. It is even mentioned in the "Bahraini cuisine article on wikipedia. From first hand knowledge, I can also say it exists, and is a popular variant of the Shawarma in Bahrain, and also Saudi Arabia.
