In Palestinian cuisine, Hilbeh, Hulbah, or Fenugreek Cake is a dessert made from fenugreek seeds, olive oil, and semolina, topped with nuts, nigella seeds, or sesame, then coated in sugar syrup, which soaks into the cake.[1]
